ALMOND BUTTER APPLE SANDWICH!



This is a really fun and tasty dish.  I eat this for a lunch or a snack.  It's super easy and I think you'll be surprised at how delicious this tastes!  We are going to start out by making your own almond butter!  Don't panic, you just need almonds!


Equipment:  Food processor/blender

Ingredients:
1 cup almonds
1 apple
1 banana 
pinch of salt






1. Place your almonds with a dash of salt in your food processor.




2. Now start mixing it and after about 2 minutes, you will need to scrape the sides down with a rubber spatula.




3. Now in this picture (above), we have what we call 'nut meal' or 'almond flour'.. just a fyi :)  But we need more of a pasty texture, so keep blending, and scraping, and blending, and scraping...




4. After about 5 or 6 mins, you will have a spreadable almond butter.  Now if you still don't, add just 1 tsp of olive oil/grapeseed oil.  Add it WHILE it's mixing to evenly distribute the oil.  Keep blending and scraping.  Remember, it's homemade.  You don't want it all liquid-y and runny.. Just a spreadable texture!

5. Now cut your apple crosswise.  Like this...







6.  Slice the apple so you have a 'sandwich'... I cut mine this thick....





7.  Cut out the 'star' with a small knife to form circles.




8. Now spread your almond butter on each slice and place some sliced banana on it!

 

 (*You can top it with raisins or spread some jam on there, too)

9.  Now put it together and eat it!!  



*I bet you'll be surprised at how much flavor this has!  MMMMMMMMM!
