Raw Spaghetti? What? When you become a Raw Foodist, you have to 'immitate' some of your favorite dishes with vegetables, fruits, or nuts. It's very nutritious, delicious, and actually quite beautiful.... Here is what you need...
Equipment: Food processor/blender AND a cheese grater (or peeler)
Ingredrients: *For Pesto*
2 cups fresh basil leaves, stems removed. (firmly packed)
1 garlic clove, crushed
1/4 cup olive oil
1/4 tsp salt
1/4 cup pine nuts (found in baking section or produce)
*For Spaghetti*
2 zucchinis (per person)
1. Place ingredients, EXCEPT the pine nuts, in your processor.
2. Now process just until the basil is chopped, about 10 seconds! If you can pulse it, do that. See below, basil is chopped up.
3. Now add your pine nuts. Now process just long enough for the pine nuts to chop a little but you can still see them throughout the pesto. Like this...
4. The pesto is a little liquid-y, but I can still see pine nuts. Now scoop it out and place in a bowl; set aside.
5. Now lets get your zucchini ready.
(Zucchini comes in different sizes, so you can choose how much pasta you want).
6. Wash and peel your zucchini skin with a peeler. If you don't have one, use a small knife.
7. Now we are going to make 'spaghetti'... You can make 'fetticini' by just peeling the zucchini with your peeler, like this....
8. Or, I like to use a cheese grater and make a thinner spaghetti, using the smaller holes and holding the zucchini long ways, sliding it in a downward motion only, from top to bottom, to make the noodles...
9. I grate my zucchini until I reach the seeds, then stop.
(Don't throw it away, save it for a salad or throw it in a green smoothie)
10. Put your 'noodles' on a plate and mix in your pesto! Enjoy your 'Raw Spaghetti al Pesto!'
